Summer is officially here and nothing says warm weather quite like a batch of freshly baked muffins bursting with sweet juicy strawberries. If you're looking for a tree that feels indulgent, but keep things clean, grain-free and refined sugar-free then these are for you. 

Ingredients

1/3 cup of oil (coconut or avocado)

4 eggs

2 1/2 cups of almond flour 

1/2 cup of honey

1 Tbs lemon juice

2 tsp vanilla extract 

3/4 tsp baking soda

1/4 tsp salt

1/2 cup strawberries 

 

Instructions

  1. Preheat your oven to 325 F 
  2. Line your muffin tin with liners
  3. Combine the oil, almond flour, eggs, lemon juice, honey & vanilla in a food processor or blender until fully combined and smooth. 
  4. Add the baking soda & salt and process again until combined.
  5. Chop the strawberries & fold them into the batter along with the lemon zest.
  6. Fill your muffin tin with batter. 
  7. Bake for 22-25 minutes. Test with a toothpick inserted into the muffin to see if it comes out clean.
