Healthy Vegan Peanut Butter & Chocolate Ice Cream

This Peanut Butter and Chocolate Ice Cream is Vegan and is sweetened with dates. It is so creamy and delicious!

Ingredients
12 Medjool Dates (pitted)
2 cans of full-fat coconut milk (14 oz each)
1/2 cup creamy peanut butter
1/2 cup cacao powder (or cocoa powder)
2 tsp vanilla extract
1/4 tsp salt
1/2 cup dairy free semisweet chocolate chips
Instructions
1) Freeze your ice cream maker bowl for at least 12 hours.
2) Place the dates in a bowl and cover with hot water for 10-15 minutes
3) Drain the dates and place them in a blender with coconut milk, peanut butter, cocao powder, vanilla extract & salt. Blend until smooth.
4) Pour into your ice cream maker and churn until thick, about 20 minutes.
5) Add chocolate chips and churn for a few more minutes.
6) Enjoy immediately or freeze in a freezer safe container for 3-4 hours.
